Mozzarella cheese is made using fresh pasteurized cow’s, buffalo’s, or goat’s milk.
Heating the Milk — The cheese-making process begins by heating the milk along with food-grade citric acid, which helps to lower the pH of the milk and give the cheese its distinctive texture.
Renneting — A splash of microbial enzymes called “rennets” are then added, which cause the milk to coagulate, creating soft curd.
Cutting & Stirring — The curd is then cut into small pieces and stirred. The stirring helps to release the whey from the curd, which releases the moisture from the curd so the cheese can be shaped.
Kneading & Stretching — The curd is then kneaded, stretched, and shaped into various sizes and shapes of cheese.
Flavoured & Shaped — Once the cheese is shaped, it is then submerged in a saltwater bath to give it its salty flavor, and finally it is packed.
